Al Fresco Dining...it is Time!

I am so happy that it is Spring! The snow has melted and the grass is greening up. In my yard I have noticed the plum trees are starting to bloom. I can't wait until they are in full bloom because they smell so good! George stopped by today and we discussed plans for tilling up a spot in the yard for a pollinator garden. He is such a sweetheart and he already tilled up the "Big Garden" for vegetables, but he said he wants to come back and do it again, just to even things out, and make them just right. I know it will be perfect! I can't wait to start gardening, but since it is still a bit early I will have to keep busy making delicious creations in the kitchen.


Today, inspired by hearing the birds sing in the yard as I watched the sunshine pour in, I decided I needed to get outside and incorporate Al Fresco dinning into my life again. As the sun sets I am trying to think of something special to make for dinner to celebrate spring and this beautiful day that I have had in the country.


Where I live here, in Western Wisconsin, chicken and beef are big menu items. I try to eat local fare and tonight I think I will incorporate chicken into a springtime dish. At the local grocery store here in town they make delicious fried chicken. I picked some up the other day for lunch and well, I can never eat it all so, I will make something with the leftovers...


Springtime Chicken Salad Lettuce Wraps


Leftover fried chicken cut into small sections (without the skin)

Red apple diced

1/2 a white onion diced

Raw cashews roughly chopped

Lime juice

Salt and pepper

Mayo

Lettuce


Instructions


Wrap chicken salad in leaves of fresh lettuce and enjoy! Note: I also added toast points with Tunisian olive oil as a fun side.


Pair with a cold rosé!

Eating Al Fresco is so great because food tastes so much better outdoors. The senses are awake and alive and the tastebuds are ready to sample the fresh food spring has to offer.
